Pumpkin Protein Bread/Cake

Ingredients:

• ½ C Xylitol Brown Sugar Blend (Ideal)(I used 1/4 cup Splenda brown sugar blend)
• 1/2 cup unsweetened applesauce
• 1Tbsp. ground cinnamon
• 1 ½ tsp. ground ginger
• ½ tsp. ground clove (I used pumpkin pie spices instead of ginger & cloves)
• 1 tsp. baking powder
• 1 tsp. baking soda
• ½ tsp. salt
• 2 tsp. vanilla extract
• 4 large egg whites
• 1 - 15 oz. can of raw pumpkin
• 2 C wheat flour
• 6 scoops vanilla whey protein
• ½ cup milk
• ½ C chopped walnuts

Directions:
1. Preheat the oven to 350.
2. Spray a 9 X 13 Pyrex dish with non-stick spray.
3. Combine all ingredients and mix well.
4. bake for 30 min.
5. Cut into 12 squares(they are pretty big too)

Each square has about 180 calories, 26 carbs, 12 protein, 3 fat
I usually eat 1/2 serving for a snack and top with 2 Tbsp. light cream cheese
Also, I cut into squares and let cool, then put them in a big baggie and freeze them. Just get one out that morning that you want one, they freeze well.
