This was so yummy, I had to share. Quinoa recipe...

I made this tonight and it was SOOOOOO good. (Even my kiddos loved it)

I did it individual baking dishes, so the following is how to do one individual serving--though you could just multiply it all by how many people and do it in a bigger casserole dish.

Quinoa Lasagna with Ground Turkey

1 Cup cooked quinoa (when you cook the quinoa put some garlic in the water--I use minced garlic)
4 ounces of cooked ground turkey
1/2 cup of spaghetti sauce
1/2 cup of lowfat mozerella cheese (shredded)
Some diced tomatoes (I used ones with Italian seasonings)

* After you cook your turkey, just add the diced tomatoes to the meat and make it a mixture. I sprinkled in some Iralian seasonings too.

IN a baking dish layer quinoa, some sauce, some cheese, the meat mixture. Again...quinoa, sauce, cheese, meat mixture. Then top with sauce and cheese.

Bake at 350 degrees for about 30 minutes.

This was so EASY and delicious.

This whole HUGE serving is about 600 cals. You could easily make a meal out of HALF the serving at 300 cals. It's high in protein and REALLY filling!

I will admit that I ate the whole thing since I had 1300 cals left just to get to my goal before exercise.

It's a definite win and I will be doing it again.

    This sounds good. I had Quinoa for the first time when I had a sample at Trader Joe's. They made the recipe on the back and it was delicious. Thank you for the recipe, I will try this one also.

    I tried this last night and it was actually pretty good except mine was a little watery in the bottom of the dish after i cooked it. It actually stayed together pretty well. Delicious!

    I love quinoa! I've used it with these exact ingredients, but I've always just made it in a skillet. I had no idea that it would work for a lasagna! I'm definitely going to try this. Thanks!

    I have to add that I always add garlic to the water when I make quinoa, but all I do is crush it with the side of the knife. That way, the clove retains more of the juices and you get a more garlicy taste (and smell).
