Yummy chicken dinner
This is modified from the Eating for Life book....It is delicious, quick, and easy!
What you need:
Cooking spray
2 bell peppers, chopped (any color comb)
1 red onion, choppped
Mushrooms (one "box")
1/2 lb chicken breast or tenders, chopped into bite size pieces
Montreal Poultry seasoning
Steps:
1. Line cooking sheet with tin foil
2. Spray with cooking spray
3. Put the veggies and chicken on the pan
4. Spray with more cooking spray
5. Sprinkle chicken and veggies with poultry seasoning
6. Roast on 350 for about 20 minutes
My oven cooks really fast, so cooking time may need to be adjusted; the EFL book says to put the chicken and veggies on Skewers, but that's just more work. I also add cherry tomomatoes sometimes.
You can also serve this with brown rice or a baked potato.

Hi All,
I made up one really similar Sunday nite and it came out really good.
Skinless Chicken thighs (or whatever you like)
red, green, yellow pepper,
garlic (fresh or minced spice)
onioin to taste
Salt and fresh ground pepper
Poultry seasoning
Lawrey's Season all
sautee veggies in a little olive oil
line pan w/ foil - spray w/ olive oil, place seasoned chicken in pan and cover w/ sauteed veggies, roast covered for 35-40 min @ 375 degrees.
Serve w/ brown rice and some asparagus!
You can probably substitute any veggies you like - that's just what I together. It turned out really good, I was surprised. Hope you enjoy it.0 -

Yes, mine makes 2 servings. You can add as much of the seasoning as you want. We love it heavily seasoned....0
