Autumn Squash medley! :)

This may be old news for some of you but this was the first time my mom and I thought to try this. it's an awesome mix of fall veggies and you just roast them! Wish I could take a picture, it's so October looking!

Ingredients:

1 Butternut Squash, cut into 1 inch cubes
1 Acorn Squash cut into 1 inch cubes
2 Sweet Potatoes cut into 1 inch cubes
A cup or 2 of Baby carrots (or regular carrots) Slices to your preference.
Approx 1-2tbsp light olive old
Dash or two of salt and/or pepper

Spread all the yummy veggies out onto a baking pan. Add the olive oil, salt, and pepper. Toss it around a little so everything is coated and mixed. Put into the oven at a 350 degrees for 50-60 minutes. Stirring after 30 minutes.

When I put the recipe into here, it ended up being about 260 calories for about 2 cups. But it's suuuper filling.
