Favorite Vegan recipes
I want to start feeding my family one vegan meal a week and was curious if anyone had a favorite website or recipe that they LOVE it has to be kid friendly, I have 4 boys one of them a teenager that is totally not willing to go vegan but I wanted to try to at least make one dinner a night vegan so that way I can have one full day of vegan eating, I am just starting out with this so need some good resources!!

My absolute favourite is the "Saag Peaneer" . As long as I stick to the portion size it does not hurt my calories at all.0 -
Something I recently tried and love it! Taken from All Recipies.com but modified. And my family is not Vegan but loves this!
1 tablespoon olive oil
1 red bell pepper, diced
1 green bell pepper, diced
1 fresh jalapeno pepper, diced
4 stalks of celery diced
4 cloves garlic, minced
1 onion, chopped
1 (28 ounce) can crushed tomatoes, with liquid
1 (6 ounce) can tomato paste
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can chili beans in spicy sauce, undrained (Bush's)
1 (15 ounce) can cannellini beans
1/2 bag frozen okra
2 tablespoons Chipolte peppers in Adobo sauce (Hot!)
2 tablesppons ground cumin
1 tablespoon chili powder
2 teaspoons dried oregano
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper, or to taste
Saute' the raw veggies in the oil; combine with all the canned veggies, tomatoes, frozen okra and beans. Cook for at least 1 hour on medium. Enjoy! Can be served over rice, pasta or on it's own since it has complex carbs in the beans. Top with a tablespoon or two of light or low-fat sour cream to reduce the heat and make a little creamier.0 -

Hands down my favorite vegan recipe. You can easily omit some of the spice to make it kid friendly. Don't even mention the fact that it's ground soy and I promise you they won't notice a difference!

Sometimes I'm satisfied with vegeterian fare, but other times, I feel I really need the protein from meat or dairy.
