Healthy Baked Scotch Eggs - Vegetarian

These are ovo-vegetarian, but NOT vegan. Sorry!

For those of you who've never had scotch eggs, they're basically a hard boiled egg, rolled in flour, encased in ground sausage, which is then egg washed and breaded. Then traditionally you fry them.

Anyways, I adore scotch eggs. After realizing that half a scotch egg is about 300 calories, I was extremely sad that I'd never get to have them again. Luckily, my girlfriend came to the rescue about a week ago when she introduced me to gimmie-lean vegetarian meatless sausage. The stuff is AWESOME! Way healthier for you than real sausage, and its possible to make this recipe even healthier by replacing the egg wash with egg substitute.

Without further ado, here is the recipe...

6 small/medium eggs (older than 1 week)
1 large egg
1 14oz roll of Gimmie Lean meatless sausage (should be available in most grocery stores)
1/2 cup panko japanese bread crumbs
1/4 cup flour
water

1) First, take the 6 older eggs and hard boil them. Once they're cooled, peel and place in a dish filled with water.
2) Take each hard boiled egg and roll in flour. Discard excess flour.
3) Crack the remaining egg and wisk in a bowl.
4) Open tube of gimmie lean sausage and cut into 6 equal sections.
5)Take one section of sausage and use it to completely cover the egg. When you have it covered it should look like a baseball of sausage. No egg should be left visible.*
6) Take coated sausage-covered-egg and roll in egg wash.
7) Roll in panko until completely breaded.
8) Place on cookie sheet.
9) Repeat steps 5-8 until all 6 eggs are breaded.
10) Place cookie sheet in fridge for about an hour.
11)Preheat oven to 400 degrees f
12) Bake for 30 minutes or until golden brown
13) Slice in half, and serve! You can use hot sauce for dipping, or pretty much anything else that tastes good. They're more or less a bar food.

Makes 12 1/2 egg servings

*This can be annoying because the sausage is extremely sticky. It helps to wash your hands with cold water between each egg and let your hands stay wet while handling the sausage.

  • Quorn also make mini scotch eggs (the bite sized ones) that are 60 cals each. I love them. I used to eat scotch eggs when I was little and thought I would never have them again after I became vegetarian. Now I have found the quorn ones, a couple of them make a great afternoon snake with a cup of tea!
