About to finish C25K- What next?

Today I started my final week of C25K. I've been doing all of the running portions at 5mph and want to start focusing on getting faster. My goal is to eventually complete a 2 mile run in under 18:00.

I was thinking of restarting the C25K program and subbing the walk for a 5mph jog and doing the run portions at 6-7mph until I am able to do the 7mph for 18:00. Does this sound like a reasonable way of building speed? I had to take a year off from running due to a knee injury and I am terrified of reinjury, but I want to get faster.
