88 Calorie Cupcakes
Seriously. 88 calories. 1 box of cake mix (I used Pillsbury Devil's Food), 1 can of pumpkin, and coffee. You're supposed to use 1/2 cup of coffee but I used a cup because the mixture seemed way too thick with just half a cup. Bake like the box says. You get 24 moist, delicious cupcakes at 88 calories each. You could even add some of the low sugar frosting and keep the calories reasonable. And sometimes, you just need a cupcake.

I have always made these but with water - I will try the coffee. Sounds great. And it definately needs 1 cup of liquid.0

I made some with the French Vanilla Betty Crocker recipe, used apple sauce as replacement for oil, added 2 tsp of pumpkin spice and 1 can of pumpkin puree. It tastes really good but didn't give me the pumpkin bread consistency I was craving for. But it tastes yummy!0

I made cookies like this tonight and my kids loved them (so did I)
I used one box of spice cake, one egg and one 15 oz of pumpkin/ Put little spoon fulls on a cookie sheet and baked for 20 minutes at 350.

I have made the recipes from skinnytastes.com for these, but they didn't turn out right. I'm trying this tonight. OH the pumpkin CAN NOT EVEN BE taste in the finish product!!!!!!!!! GREAT!0

I've been trying to appreciate the value of immediately freezing individual portions so that I am less tempted by cupcakes sitting around on the counter or in the refrigerator. If I have to wait for it to defrost or put in in the microwave then I'm less inclined to eat mindlessly. I'm not saying it doesn't happen, but I'm less inclined and I have homemade treats not store bought expensive bars in the cabinet.0 -
