88 Calorie Cupcakes

Seriously. 88 calories. 1 box of cake mix (I used Pillsbury Devil's Food), 1 can of pumpkin, and coffee. You're supposed to use 1/2 cup of coffee but I used a cup because the mixture seemed way too thick with just half a cup. Bake like the box says. You get 24 moist, delicious cupcakes at 88 calories each. You could even add some of the low sugar frosting and keep the calories reasonable. And sometimes, you just need a cupcake.

I have always made these but with water - I will try the coffee. Sounds great. And it definately needs 1 cup of liquid.

I made some with the French Vanilla Betty Crocker recipe, used apple sauce as replacement for oil, added 2 tsp of pumpkin spice and 1 can of pumpkin puree. It tastes really good but didn't give me the pumpkin bread consistency I was craving for. But it tastes yummy!
