Eggplant/ Aubergine Recipe?

My father likes it like this,
Cut eggplant into slices, drizzle or brush olive oil on it. Apply random spices (usually salt, pepper, garlic powder, onion powder and basil). Bake at 350°F for about 20-30 mins, or until a bit soft. Then add either a can of chopped tomatoes or freshly chopped tomatoes depending on what we have on hand. Top with either cheddar or mozzarella cheese, place back in the oven until the cheese melts, usually another 5-10 minutes. Its pretty tasty sometimes we add peppers, onions and mushrooms to it and make it a meal.0
