Simple, yummy dinner ideas?
Trying to eat right is already hard enough without having to worry about how many carbs are in it, how high is the sodium level, whats the saturated fat, etc. So here's the thing, I just want a simple, easy to make dinner that can feed about 3 people or so and not take several hours to prepare and cook. As long as the calories aren't through the roof I'm ok with it.
In the cooking world full of many meals, I was pretty sheltered, trust me. I mean we rarely used the stove unless we had to boil water or maybe make a pizza, or if it was Thanksgiving haha. Dinner to me was cereal, popcorn, chips, biscuits with peanut butter...small things like that. And they were good to me. I was ok with it. I didnt see a problem with it.
Then I met my boyfriend, who got me to expand my horizon and eat more meat and have bigger meals. He thought it was crazy how I grew up eating spaghetti WITHOUT meat. That was normal to me so I didnt care. Now I love having meat in my meals. But its getting harder to think of dinner ideas cuz I dont know many. Bottom line, if anyone has any great recipes or dinner ideas, I'd love to hear them. BUT, I must say I do NOT like ANY seafood of ANY kind! And I'm not big on chinese either, so there it is... I'd appreciate it!

We often get the fajita kits from the supermarket (we use the wholemeal discovery tortillas). You only need to the sauce mix, some chicken, onion and pepper. Fry it up (it only takes 10 mins max) and the tortillas can be warmed in the microwave. We're a family of 3 and these are a really good quick meal that keeps me going. The tortillas come in packs of 8 so my boys have 3 each and I have 2. We have these once a week now on a busy day because they are so quick to prepare. Hope you find lots of good ideas!0

fajita seasoning is quite simple to make. message me if you want the ingredients. That way you can leave out any added salt and sugar if you want to.0

THis dinner it totally yummy and not bad on the calorie count:
Straight to wok noodles
Veg like peppers, courgetts, onion, beansprouts
Poached chicken shredded
Peanut sauce (2 tablespoon low salt soy, 3 tbsp crunchy peanut butter, 3 tbsp sweet chilli sauce, 100ml water)
Method:
- Fry off you veg for a while until cooked to your liking
- Pull the veg to 1 side of the pan and add peanut sauce to the other side, boil this for a min or so and then mix with the veg.
- Add shredded chicken
- Add noodles
- Mix
- Enjoy!!

Tuna tacos! Take a can of tuna, drain it and add 1 or 2 tbsp of mayo (if you like this... if not, don't add it!) and also some lemon pepper seasoning (like Mrs. Dash). Take a whole wheat tortilla, place lettuce, shredded carrot, a tiny bit of shredded cheese, some salsa (which ever kind you like) and the tuna on it. Fold it in half like a soft taco. Simple, delicious, and very healthy! I will have just the tacos for lunch, but you could pair it with a salad and you have a filling supper. How many tacos you get out of a can of tuna is up to you. I usually do 2 but I make mine real big, so I have one taco for my meal and have the rest of the tuna ready to go for another taco at a later time.
Another idea is beef or chicken stew done in the slow cooker. Google will give you tons of ideas for recipes.
I do a pork chop dinner in the slow cooker. I put my pork chops in the slow cooker, then put whatever veggies I like in as well. I usually use spinach, mushrooms, red and green peppers, sliced carrots, diced onion, and garlic (or garlic powder). Then I throw a can of diced tomatoes in. Cook on high for 4 hours (or low for 8 hours). Keep an eye on it as thinner pork chops wont take as long to cook. So use your judgement! Also could sub the pork chops for chicken breast or chicken thigh if you like. Would be real tasty!0 -
