So I am IN LOVE with these dumb lattes, but I know they're really high in empty calories (they're also not cheap, even if you buy the ready-made consentrate). Does anyone out there have a good low-cal, low-sugar, or otherwise healthier chai tea latte recipe? I'd love to hear it, if you do :-)

This sounds awesome, thanks for the reply! I'm sure others will be glad to have this. I should have mentioned, however, that I can't have any artificial sweeteners (like sugar free syrups or sweet-n-low) because I have migraine issues and those are a huge trigger for me (unfortunately). That's why I'm looking for alternative recipes. I also can't drink red wine anymore which REALLY bums me out!

    Chai tea Ice cream... Yummy!!!

    Calories: 174
    Fat: 2.6g
    Sodium: 144mg
    Calories from fat: 13%

    2 cups 2% reduced-fat milk
8 chai tea bags (such as Bigelow Vanilla Chai)
1 (3-inch) piece vanilla bean, split lengthwise
    1 (12-ounce) can evaporated fat-free milk
    2/3 cup sugar
    2 tablespoons cornstarch
    1/4 teaspoon ground ginger
    1/4 teaspoon ground cinnamon
    1/8 teaspoon salt
    1/8 teaspoon ground cardamom
    1/8 teaspoon ground nutmeg
    1/8 teaspoon ground cloves
    Dash of black pepper
    2 large egg yolks
    Preparation
Cook 2% milk over medium-high heat in a heavy saucepan to 180° or until tiny bubbles form around edge (do not boil). Remove from heat. Add tea bags and vanilla bean; let stand 15 minutes. Remove and discard tea bags, pressing liquid out of bags. Remove vanilla bean; scrape seeds from bean into milk mixture, and discard bean. Add evaporated milk, stirring with a whisk.
Combine sugar and next 9 ingredients in a medium bowl. Gradually add milk mixture to sugar mixture, stirring constantly with whisk. Return milk mixture to pan. Cook over medium heat until mixture thickens and coats the back of a wooden spoon, stirring constantly. Transfer mixture to a bowl. Place over an ice bath and cool completely, stirring occasionally.
Pour milk mixture into the freezer can of a 2- to 3-quart ice cream freezer, and freeze according to manufacturer's instructions. Spoon ice cream into a freezer-safe container. Cover and freeze 1 hour or until firm.

I make mine in the Crockpot. Combine 8 black tea bags, 8 cups water, approximately 1.5 inches of sliced, peeled fresh ginger root, 5 cinnamon sticks, and 16 whole cloves in a slow cooker. Cook on high for 2 hours. Strain and allow to cool before refrigerating. Lasts about 1 week in the refrigerator. Can be served hot or cold. I drink mine cold and measure out equal parts chai and skim milk, and I add 2 packs of Stevia. Mmm...
  • I make real indian chai with real spices:

3/4 cup of water (start to boil)
    -add some fresh grated cinnamon
    -pinch of black pepper
-some fresh grated ginger (About a tbsp)
    -pinch of clove

then when the water is almost bubbly, add fresh black tea leaves
stir gently, add 1/2 cup milk (2 percent or whole!)

-add a TBSP of honey or sugar.

So good for you! I'm making chai tonight for a dinner party---
