Crockpot Chicken Taco Stew

Approx. 14 one cup servings

1 onion, chopped
1 19 oz can black beans
1 19 oz can kidney beans
1 19 oz can corn (drained)
1 8 oz can tomato sauce
2 19 oz cans diced tomatoes
1 small can green chopped green chilies
1 1.25 packet taco seasoning
3-4 boneless skinless chicken breasts

Mix everything together in a slow cooker except the chicken. Lay chicken on
top and cover. Cook on low for 6-8 hours
or on high for 3-4 hours. 30 mins before serving remove chicken and shred.
Return chicken to slow cooker and stir in.

Serve with cheese, sour cream, tortilla chips, pita or lettuce leaves.

    It was a couple weeks ago but you asked for a review. Since I'm trying to lower my sodium I found salt free or low salt ingredients (as in the canned stuff). With that and eating a bit of Tex-Mex for the last 20 yrs I thought it a little lacking. So I threw in some garlic and a heaping tbs of Chipotle chili pepper powder. Oh yeah!!! Also, my wife, who does not like beans even a little, said it was VERY good and she only pushed a few of the beans to the side. So I count this as a keeper for sure. Thinking next time I may throw in some bell peppers or banana peppers with it to kick it up some more.

    WOW!!! This was awesome. I only added green bellpeppers because someone mentioned it and it sounded good. Otherwise I followed the recipe except used beans with no salt added. Trying to work on my sodium. :bigsmile: But, this should come with a warning!! Smells your whole house up. It's hard to wait until it's done. My house smelled so yummy all day. But, I didn't snack. All I wanted was what was in the crockpot! Thanks FC it was awesome! DH liked too. I am going to take it to my churches next potluck with some chips!

    This is terrific. I used pre-cooked ground deer meat the last time I made it and it was just as good. As a matter of fact I used it for lunch several days after. YUM!!
