My homemade granola

Someone on my thread started talking about making granola this weekend, and it sounds delicious! Here is a recipe that I created that I love.

Granola Mix

2 Cups oats
3 Tablespoons flaxseed meal
1/2 cup cashews, chopped or whole
1/2 cup raw almonds, chopped or whole
½ cup pecans, chopped or whole
¼ cup pumpkin seeds
1/4 cup sunflower seeds
½ cup no sugar maple syrup
2 Tablespoons honey
1 egg white
1 teaspoon vanilla
½ teaspoon cinnamon
½ teaspoon nutmeg
¼ cup dried apricots, chopped (optional)
¼ cup raisins or craisins (optional)
¼ cup dried pineapple, chopped (optional)
¼ cup dried mango or apples, chopped (optional)

Serves: 15

Preheat oven to 350 degrees F.

Spray cooking sheet (with lip). Spread oats, flax seed, nuts, and seeds on sheet and bake for 20 minutes. Remove from oven, lower temperature to 250 degrees. In a bowl, mix syrup, honey, egg white, cinnamon, nutmeg, and vanilla. Add oat mix, combine well to coat. Return to cooking sheet and spread into an even layer. Bake 1 hour, 20 minutes. Cover lightly with tin foil, bake an additional 30 minutes. Reduce heat oven to 200 degrees. Remove tin foil cover. Turn granola. Bake additional 20 minutes or until desired level of crispness is achieved. Cool. Break up, mix in dried fruit if desired, and serve.

Tip: Spray your measuring cup with cooking spray before measuring honey and syrup – will slide right out! Read the packages on the dried fruit – avoid “chips” or heavily sugared options.

Serving Suggestion: Top non-fat yogurt with granola or pack in baggies for a portable snack.
