Serves 6
Ingredients
1 cup whole-wheat (whole-meal) flour
1 cup all-purpose (plain) flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon sugar
2 cups buttermilk
1 egg
4 egg whites
Directions
In a large mixing bowl, combine the flours, baking powder, baking soda and sugar.
In a medium bowl, whisk together the buttermilk and whole egg. Add to the flour mixture and stir to mix evenly.
In a large metal or glass bowl, using an electric mixture on high speed, beat the egg whites until stiff peaks form. Gently fold the egg whites into the flour mixture.
Place a baking sheet in the oven and preheat to 225 F.
Preheat a waffle iron. Spray with cooking spray if necessary. Spoon or ladle about 3/4 cup of the batter into the waffle iron, depending on the size of the iron. Spread slightly with a spoon and cook according to the manufacturer's instructions. Transfer the waffle to the baking sheet in the oven to keep warm. Repeat with the remaining batter to make 6 waffles.

2 eggs, beaten
1 3/4 cups skim milk
1/4 cup canola oil
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
1/2 cup flax seed meal
1/4 cup wheat germ
1/4 cup all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon salt
Directions
1. In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth.
2. Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.
As an added tip... Freeze leftover batter in ice cube trays (measure you normal amount used for one waffle and see how many ice cubes it makes). Once they are frozen you can store in a freezer bag/Tupperware. Then all you need to do is thaw out the required number of "waffle cubes" and your ready for breakfast!0 -

These are my family's favorite!
Blender Wheat Pancakes/Waffles
1 c. Milk
1 c. Uncooked Whole Wheat or Cracked Wheat
2 eggs
2 tsp baking powder
2 Tbsp honey or sugar (or splenda)
1/2 tsp salt
2 Tbsp oil (for pancakes, add 2 more for waffles or they will stick)
Put milk and Wheat in blender. Blend on highest speed for 4 or 5 minutes, or until batter is smooth. Add and blend on low eggs, oil, baking powder, honey and salt.
Bake on a hot griddle.
