Bulk Recipe to share ... Fresh Vegetable Marinara and Garden
Been in my kitchen all morning today with some great vegetable sales at our local Market Basket (gonna go back again today!)
I like to create recipes that can make multiple meals or sides and absolutely 0-waste.. We do alot of bulk cooking where both my husband and I work like crazy and its helping to ensure that no matter what we have fresh meals at all times!
Bulk Recipe for Vegetable Marinara and Garden Tomato Soup - made all at once!
72 oz Roma Tomatoes - halved
6 oz Carrots - thinly sliced
6 oz Onions - quartered and thinly sliced
5 oz Celery - finely diced (about 3 ribs)
6 oz Zucchini - quartered and thinly sliced
4 oz Summer Squash - quartered and thinly sliced
1 small green bell pepper, diced
4 Garlic cloves
1/2 C Olive Oil
**2-3 C fresh chicken stock
Set oven to 450F
Do your 'mise en place' first!
Take your halved tomatoes and place in a large bowl - add your olive oil and green peppers. Mix thoroughly. Pour bowl onto a sheet pan and evenly distribute so the heat can penetrate everything on the pan. Cook in the oven for approximately 30 minutes.
Take all of your vegetables and divide in half in two separate bowls. Set aside.
Once tomatoes are done, remove from oven (You wont need the oven any longer) Allow to cool slightly and fill your blender. Puree until it is completely smooth (juice and all from the pan) - you may need to do a couple of batches at a time. As each batch is pureed - evenly pour into two different pots (one for marinara and one for soup).
In your soup pot, add your chicken stock.
In both pots, add the halved portion of vegetables to each.
Your marinara should be seasoned to taste with oregano, italian seasoning, basil, kosher salt and pepper to your own liking
Your soup should come to a medium boil and seasoned to taste with kosher salt, pepper, thyme, rosemary, oregano to your own liking.
Keep in mind your marinara will thicken a bit - you can add some stock if you like and adjust the thickness to your own liking.

I didnt add the chicken stock because everyone makes their stock differently and that could throw the numbers off a little bit0
