Love cabbage, love cabbage rolls but HATE the fuss of rolling so Casserole!!!!
This makes 2 freezable casseroles serving 6 people each casserole.
1/2 head of a large cabbage shredded
2 lbs of ground dark meat turkey...best if there is no skin in the turkey.
1 can of crushed tomatoes --at least a 14 oz can
1 can of tomato paste-- the small can
1 medium onion
1 tablespoon of oregano
1 tablespoon of celery seed
1 tablespoon of grapeseed oil--I used on that is garlic infused..
3 cups of cooked brown rice
Here's what I did. I cooked the brown rice as directed to half way cooked, drained and left in the cooking pot.
In another pot start your onions with a little of the oil in a low cooking process with the lid to carmelize the onions... make sure this is a nice big pot. Once the onions seem to be browning add the cabbage to it with a 1/4 cup or so of water.
In a large frying pan add the other half of the oil and brown your meat. Add the rest of the rice, both tomatoes and the spices to simmer until rice is finished cooking.
In the casserole dishes divide the cabbage onion mixture between the two and then add the tomato, meat and rice mixture to the top. Cool and freeze or serve one now and cool the other. According to MFP this comes in at the following nutritional value:
Cals 216, Protein 20 grams, Fat 5 grams, Fibre 5 grams, Sugars 6 grams and carbs 23 grams.
Enjoy!
