Giant Whole-Wheat Banana-Strawberry Muffins
2 eggs
1/2 cup unsweetened applesauce
1/4 cup vegetable oil
3/4 cup packed brown sugar
1 teaspoon vanilla extract
3 bananas, mashed
2 cups whole wheat flour
1 teaspoon baking soda
1 tablespoon ground cinnamon
1 cup frozen sliced strawberries
Preheat the oven to 375 degrees F (190 degrees C). Grease 12 large muffin cups, or line with paper liners.
In a large bowl, whisk together the eggs, applesauce, oil, brown sugar, vanilla and bananas. Combine the flour, baking soda and cinnamon; Stir into the banana mixture until moistened. Stir in the strawberries until evenly distributed. Spoon batter into muffin cups until completely filled.
Bake for 20 minutes in the preheated oven, or until the tops of the muffins spring back when pressed lightly. Cool before removing from the muffin tins.

I just made them and they look yummy!! I didn't have strawberries, so I used no-sugar strawberry applesauce and I used 1/2 c. eggbeaters instead of 2 eggs. I topped them w/ mini chocolate - chips. I will have my kids taste test them when they get home from school! :bigsmile:

Okay they appear to be fine, I put a little splenda on top and since I used pumpkin, applesauce (no sugar) and a chopped apple less skin, that should be fine. Oh, well, I still have ingredients to make more at a later date (put some of these in the freezer as there are only two of us) and they didn't cost as much as the Weight Watcher muffins I bought at three for $2.99 on sale!
Anyone else ever freeze and re=thaw these types of things?0 -

I made these again today (actually my 10yo made them w/ just a little help. :laugh: ).
We made them a little less giant, and it made 20 muffins. Used the no sugar added strawberry applesauce. Yum!0 -
has anyone tried to add more applesauce in place of the oil? then they'd be even healthier?
