Giant Whole-Wheat Banana-Strawberry Muffins

2 eggs
1/2 cup unsweetened applesauce
1/4 cup vegetable oil
3/4 cup packed brown sugar
1 teaspoon vanilla extract
3 bananas, mashed
2 cups whole wheat flour
1 teaspoon baking soda
1 tablespoon ground cinnamon
1 cup frozen sliced strawberries

Preheat the oven to 375 degrees F (190 degrees C). Grease 12 large muffin cups, or line with paper liners.
In a large bowl, whisk together the eggs, applesauce, oil, brown sugar, vanilla and bananas. Combine the flour, baking soda and cinnamon; Stir into the banana mixture until moistened. Stir in the strawberries until evenly distributed. Spoon batter into muffin cups until completely filled.
Bake for 20 minutes in the preheated oven, or until the tops of the muffins spring back when pressed lightly. Cool before removing from the muffin tins.

    Now I know what to do with those too ripe bananas! I was going to make banana bread, but think my kiddos will love this too! :bigsmile:

    Wonder if you could use pumpkin instead of the oil and applesauce?? and egg beaters to cut down on fat

    I'm sure you can sub the oil & applesauce with pumpkin. I'll be using egg beaters too.

    I just made them and they look yummy!! I didn't have strawberries, so I used no-sugar strawberry applesauce and I used 1/2 c. eggbeaters instead of 2 eggs. I topped them w/ mini chocolate - chips. I will have my kids taste test them when they get home from school! :bigsmile:

    My kids loved them!! I even took a pic of them after I took them out of the oven so I will post it. My Dad was here too and he ate one and took one home w/ him too! :bigsmile: Thanks again!
