Date Ideas? (Meals, please!)

Okay, so I got one great idea from a friend (thanks!) but I'm looking for a few more ideas.

Does anyone know of any good easy/cheap/low-cal meals for two?

Looking to cook dinner for my man, and I'd like to prove to him that I actually CAN cook (or at least fool him).

    My favorite dinner lately:

    whole wheat spaghetti
    spinach
    low fat ricotta
    top with toasted pine nuts and shaved parmesan cheese

    This is a staple in my house (one of my hubby's favorites) and it's great for vegetarians (me) and non-vegetarians (my husband)

    Chicken or eggplant parmesan - classic, simple and healthy.

    Pound chicken thin or slice eggplant thin - coat in egg whites then dredge in italian breadcrumbs mixed with grated parmesan - bake at 350 until brown and cooked through - top with marinara and sliced (fresh) mozzarella - throw under the broiler for a couple minutes until melted and bubbly - serve with whole wheat pasta or spaghetti squash and marinara.
  • Marinate chicken breasts (in bottled italian drg if you want), broil. Make a huge salad. I sometimes do roasted potatoes... impressive but easy (and cheap!)
  • Skinnytaste has an awesome recipe for chicken cordon bleus. They look super fancy, but in reality are super easy to make, and the stats are 260 calories per piece. I'd make it with a spinach salad with maybe hardboiled egg, some cheese and a vinagrette, and some steamed veggies on the side. Hope you have a good date =)

    Chicken Cordon Bleu : 584 calories; have it with some red wine and parmesan cheesy bread
