Moroccan Vegetable Soup

I made this warming and filling soup today for a group of 20, and it went down very well! It's super-healthy, and made with my favourite spice, cumin. I've posted the recipe in the database for those who want to know the nutritional breakdown.

Moroccan Vegetable Soup - serves 4

1 T olive oil
1 onion, chopped
2 celery sticks, chopped
2 garlic cloves, chopped
2 t ground cumin
500ml vegetable stock
1 tin chopped tomatoes
1 tin chickpeas
100g frozen broad beans
juice and zest of 1 lemon

Gently fry the onion, celery and garlic for 10 minutes. Add the cumin and fry 2 more minutes. Add the stock, tomatoes and chickpeas and simmer for 8 minutes before adding the lemon juice and broad beans, then simmer 2 more minutes. Garnish with the lemon zest and serve with crusty bread.
