Portobello mushrooms are very hard to find where I live and I was lucky enough to find some at the farmer's market this morning. Since I love them, I do not want to waste them in a so-so recipe! Do you guys have a good, preferably healthy, recipe including portobellos?

I love them grilled, topped with a little basil pesto, some sundried tomato salsa, and cheese - mini portobello pizzas!0

I remove the stem, spray the mushroom in olive oil hit it with garlic and broil... then add anything. The last time I did this I took 1/4 cup part skim ricotta, 1/4 cup low fat shredded mozzarella, garlic (yes more), and pepper and mixed it all together and spread it on top of the mushroom cap, added some tomato slices, some sliced garlic (yes more), and a touch of shredded mozzarella and baked it for another 10 minutes until the mozzarella melts... and then throw it under the broiler for a couple minutes to hit the tomato!
YUM!0 -
Along with all that cheese and tomatoes others are mentioning, if you add some either real or imitation crab meat.....the real stuff is wonderful!0

You can grill them and make portobello sandwiches, or use only half a bun to save calories. I love mushrooms so I can just eat them alone.0

OMFG, so good stuffed! Bread crumbs, some meatless ground, I think?
Cooking Light, of course. I will post recipe later, as it was in a summer cookbook from a few months back and they haven't posted to the site.0 -
Do you have a dehydrater? If so you can make "mushroom chips". I like to buy the biggest ones I can find, cut them thick, and put them in for 8 hours at 135F. They stay crispy for weeks and make a great snack.0

Portobella is my fav mushroom, and one of my fav things to do is use it as a meat replacement.
Ill slice them up really thin (stems and all) sautee them in olive oil with some seasonings, and use it in stir fry, put them in a sandwich, have it alongside some steamed veggies, layer it with zucchini, carrots, and whatever other veggies I have and bake it into a "lasagna", wrap it up in tortilla with lettuce as a burrito... I dont have any set recipes really... but it has so much flavour on its own and so versitile that I can make pretty much anything with it with whatever I have on hand.
I cant say Ive ever made something not incredibly tasty when it includes portobella..and Ive made quite a few untasty meals in my lifetime hehe!0
