Prawn Pita Sandwiches

Prawn Pita Sandwich
Serves 2

375g raw black tiger prawns, peeled and deveined (I have no idea how many this was…..20, 25 maybe? 3 servings at any rate)
1 tsp olive oil
45g (3/8cup) light feta cheese, finely diced
1 large clove of garlic, crushed
1 tsp fresh dill, chopped
2 green onions, chopped
half of one avocado, diced (about 1/2 cup)
zest of about 1/4 of a lemon
salt and pepper
1/4 tsp cornstarch
2 whole wheat pitas, pocket type (I used a Byblos at only 140 calories per pita)
two handfuls of lettuce or salad greens

Cut the prawns into small pieces. Heat the oil in a non-stick pan over medium high heat, add the crushed garlic and stir it about for a few seconds. Add the prawns and cook stirring frequently until pink and opaque, about 3-4 minutes. Don’t over cook them, once they’ve just turned pink all over, stop. Add the cornstarch and stir to thicken up the juices in the pan, add more if needed.

Remove from the heat and add the feta, dill, green onion,lemon zest and salt and pepper. Stir in the avocado.

Cut each pita bread in half and stuff each half with salad greens and then the prawn mixture.

Per Serving (1 pita or 2 halves): 407 calories, 13g fat, 39g carbs, 42g protein, 1370mg sodium, 9g fiber
