Taco Meatballs
1 Lb. 96% Lean Ground Beef
1 Large Egg, beaten
3 Tablespoons Taco Seasoning Mix
1/4 Cup Salsa
Preheat oven to 375 degrees. Combine the ground beef, egg and taco seasoning mix by hand. Divide into 17 meatballs (approx 1 1/2 tablespoons each). Spray a 9 inch glass baking dish with non-stick cooking spray. Arrange the meatballs in the baking dish so that they aren't touching. Bake for 15-18 minutes, or until no longer pink in the middle. If they start to brown too fast on top, you can lay a piece of foil on top of the dish. Toss the meatballs in the salsa and stick a toothpick into each meatball. Serve.
Serves: 17
Per Serving: 40 Calories; 1g Fat (32.2% calories from fat); 6g Protein; 1g Carbohydrate; trace Dietary Fiber; 28mg Cholesterol; 72mg Sodium
