brunch for 30

i'm responsible for brunch on friday and i'm not sure what to serve. i'd like an egg dish of some kind (hopefully one i can do the night before), a veggie, some fruit (dip or no?), a dessert, and cheese platter. suggestions or recipes?

    I made an egg bake with carmelized onions, goat cheese and spinach once that was pretty good :) message me and i will send you the recipe at home later!

    how about a frittata, with fresh fruit and some low fat mini muffins

    Go to the bisquick website they have a few casserole recipes I have used over the years. You can change them up.

    I would do some type of healthy breakfast pizza, I've seen some recipes for them on eatingwell.com I think. Fruit salad usually goes over well, just sliced fruit with whipped cream stirred in a big bowl. I personally prefer the dip/dressing on the side so I can choose to just eat the fruit, but I'm slightly picky.

    A caprese salad may be good too, just slice tomato with slice mozzarella, alternating back and forth. You could even just put it on a platter arranged in a circle so you don't have to make it so individualized.

    I'd do a couple of breakfast casseroles. One traditional, one mexican(ish), one Italian(ish) ... then serve fruit on the side.
