I notice on days I don't eat my Krema natural peanut butter, Im way low on fat intake. Is that hindering my progress?

Currently my goal states I should be having 78g Fat. But Im at 10 so far today. Most days I am way under 78.

Is there a reason I should try to eat those 78g of fat? Or is that just a suggestion, do not eat more than 78 g of fat?

It wont hinder your weight loss, but chronic underconsumption of fat may cause other issues. I would suggest that you don't continuously neglect dietary fat.

If you go low fat for too long you can wind up with gallstones. http://www.second-opinions.co.uk/gallstones.html
Seems weird because gallstones give you pain when you eat high fat, but it's actually eating low fat that caused the stones... Hence why a lot of fat people get gallbladder attacks.. We try to diet and go all low fat causing the stones to devleop and then fall off the wagon start eating fats again and it causes the stones to block the ducts.

That's a good point. I have gone back to using a little half and half in my morning coffee to up my fat intake a bit. Im mainly just worried that too big of a shock to the system might cause other bad things to happen. Like consipation.

Im already shocking my system by doing 6 days of cardio every week. I think Im going a bit overboard on the non fat stuff.
I see no reason to continue with skim milk. Im going back to 2% with my cheerios. I like the taste better.

And on days when you're a bit short on fat you can roast your veggies in a little olive oil.. Tastes sooooo much better and it makes them more filling and the oil is good for you. 120 calories of olive oil can roast a lot of asparagus or cauliflower!
