Im stumped! I am on a budget this week and need an idea for supper!! prolly something with chicken and brown rice? help!!:embarassed:

    We're having spaghetti.

    If you have Chicken out do a stir fry. We have Stir fry a couple of times a week.

    I'm having hamburger helper :embarassed: it's a weakness. lol. But I plump it up with veggies and I'm having a side salad with it. :flowerforyou:

    Make a fried rice with chunks of chicken & lots of vegtables
    We're having whole wheat pasta
    with chilli on top (like spagetti)
    With lentils....
    & for a desert fat free yogurt with real fuit on top.....yum yum:love:

    we are having a 3 bean chili that is done in the crockpot, not sure how it will be as this is the first time i have made it!

    Go to allrecipes.com and then go to the "ingredients" section. Type in what you have or want/don't want. Great way to get recipe ideas.

    Hormel vegetarian 98% fat free chili and 1.5 potatoes (boiled):tongue: 340 calories

    I'm full and still have 600 calories ( I walked/jogged 5 miles today) to have a treat tonight:smile: --that salad for lunch certainly gives me enough greens:grumble:

    Turkey burger with the works and a pototo cut up like french fries and baked in the oven, one of my fav.'s! SF Jello with SF cool whip for dessert.

    We're having baked egg rolls (made with ground turkey) and fried rice.
    Are those homemade eggrolls? I always made homemade eggrolls but fried in lots of grease. I was just wondering the other day how to cut the fat/calories. I didn't know you could bake them!

    Hubby just called and will be home late. I don't feel like cooking tonight so it might b cereal and toast or a sandwich.

    I'm having steak with corn, broccoli and onions!
    I cook it all together (with the steak cut up small) so it's like a sauce-less stir fry, I guess.

    I had 4 oz. chicken tenderloins - cooked in my microwave on my "micro grill".... as a side, I had 1/2 cup fat free cottage cheese with a small tomato.

    Have you tried the new "microwave grill"? It's like a George Foreman, but for the microwave. It's fabulous! Easy to clean or stick it in the dishwasher.

    Comes with a cookbook with excellent recepies. I use it alot - great for one person......

    Yep! They're yummy! The Recipe is on Cooking Light's website. It's simply called Baked Eggrolls. There's also a dipping sauce but I don't really like that so I just make the eggrolls. You just spray them really good with cooking spray and they get crispy. Only 79 calories each (with the sauce!)

    I sprayed a pan with olive oil cooking spray, then lightly browned chicken strips.
    Then I added Frank's hot sauce, half cup. Fat Free chicken broth, half cup. A sprinkle of splenda brown sugar. bring the liquid to a boil and let it reduce down til it's kind of a glaze.
    Serve like buffalo wings with celery and low fat ranch or blue cheese.

  • I made Red Baron's French Bread Pizza (1 pizza) for dinner with a diet pepsi. I've been craving pizza. I always eat too much of the regular pizza. These are great for me! :wink:

    I made chicken alfredo with rotini & tomatoes. Diced up some skinless chicken breast and cooked it in olive oil with some minced garlic. Added a can of Fire roasted tomatoes w/ garlic and a jar of Ragu light parmesan alfredo sauce. Stirred it all together and tossed it with some cooked Smart rotini noodles. Served it with a basic salad to get those veggies in. We havent had pasta in a LONG time, so this was SO filling! It made enough to have leftovers for the next couple days too :happy:

    I made the cheapest ones ever last week with wonton wrappers (only $4 for like, 100), dry coleslaw mix (sauteed w/onion), and ground turkey. Baked in the oven for 10 or so minutes and voila. Yummy low cal egg rolls.

    that's why I like this topic, cuz of simple things like that, too simple to post as a recipe but a great, yummy idea none the less. I will be trying that!:tongue:
