Party-Time Pimiento Cheese

Makes 3 cups

Ingredients
1 pound sharp cheddar cheese, shredded
1 small red onion, chopped
8–10 ounces pimientos or roasted red peppers, drained and chopped
1 bunch green onions, chopped
3 garlic cloves, minced
1 cup mayonnaise*
Ground white pepper to taste

Method
In a large bowl, combine cheese, red onion and pimientos. In a smaller bowl, mix green onions and garlic with mayonnaise, then add to cheese mixture and blend thoroughly. Add white pepper and stir well to combine thoroughly. Chill a few hours before serving.
