Spanish Chickpeas and Chorizo

Serves 4 to 6
This Spanish-influenced dish is equally good using canned chickpeas or ones you've cooked yourself. Serve it as an appetizer with pieces of crusty bread on the side.

Ingredients
2 tablespoons extra virgin olive oil
1 small yellow onion, thinly sliced
1/2 pound sliced spicy chorizo
2 cups (cooked) chickpeas, drained and rinsed
Salt to taste
Ground black pepper to taste

Method
In a large sauté pan, heat olive oil and sauté onion until golden. Add sliced chorizo and cook briefly, stirring to get the flavor from the chorizo. Add the beans and cook another 5 minutes. Season with salt and pepper.

Nutrition
Per serving (about 5oz/161g-wt.): 300 calories (150 from fat), 17g total fat, 4.5g saturated fat, 30mg cholesterol, 630mg sodium, 24g total carbohydrate (5g dietary fiber, 1g sugar), 12g protein
