Beans, tomato and Basil soup with Chilli potato skins

Soup.

Half Tin of beans
Half a tin of chopped tomatoes
Pinch of basil.

Potato Skins.

3 Large potatoes
Fry Light
Chilli flakes.

Cut the potatoes up in 1/4's boil them in a pan until soft. Drain the water out, put the lid on and shake the pan to rough up the edges. Cut the middle of the potatoes out of the 14's and save for a future recipe. Place them all on a baking tray, spray with fry light and sprinkle on the chilli flakes. Bake in the oven until crispy.

Next heat up the beans and the chopped tomatoes on the hob, when thoroughly heated, place in a blender along with the basil and blend away.

Add to bowl and dip in the skins and enjoy ... not sure of the calorie content but it's very low cal, and scrumptious :-)

Heat the beans and tomatoes up on the hob.
