Just to snip the most relevant part for me

The Nordic diet works in a similar fashion as the Mediterranean diet, by focusing on foods rich in omega fatty acids and antioxidants, but by using ingredients that are more suited to cold-weather cooking, as opposed to a Mediterranean climate. Berries that thrive in Northern parts of Europe, such as blueberries and cloudberries, greens such as kale and cabbage, and lean game meats such as venison or elk, are all staples of the Nordic diet, along with starches and fish.

Meyer also recommends eating more side dishes, replacing fatty cooking oils with naturally sweet condiments such as honey or molasses, and says that moderation is the key— but he doesn't focus on portion control. Rather, he believes that eating simply prepared, flavorful foods will prevent overeating.

All I can say is YUM.
