Whole Wheat NY Style Bagel Things (119 cals each)

Rather than paying a lot of money for bagel thins I created my own using my favorite NY style bagel recipe and turned them into things.


This makes 18 bagel things and each is 119 cals (will obviously vary with diferent brands).

1 3/4 cups warm water
1 tbsp yeast
1.5 tbsp brown sugar
1 tbsp vegetable oil
1 tsp salt (dont take it out or the texture gets dense, found this is the least amount that should be in from the original 4 tsp)
4.5 cups whole wheat flour
3.5 tbsp vital wheat gluten (don't use if you can find whole wheat bread flour instead of the regular, will work just as well)

if using a bread machine follow directions for order to put in ingredients and set to dough cycle when done pick up at the boiling water step below.

1. mix water brown sugar and yeast together in small bowl (measuring cup works too). set aside for about 5 min. until a little frothy on top and smells yeasty.
2. meanwhile mix together all dry ingrdients in large bowl.
3. add yeast mixture to dry ingredients until well blended.
4. knead on counter for about 10 minutes.
5. spray large bowl with cooking spray lighly.
6. form dough into a ball and place in bowl rolling it around to get it covered in oil. cover with plastic wrap and set in a warm (not hot) and draft free place until double (about 1 hour). note. inside the oven with the light on works great.

* put on a wide pot of water to boil here*

7. when doubled in size remove from bowl onto counter and punch down and fold into a managable size. weigh dough and divide by 18 (or eyeball it if you don't ahve a scale).
8. weigh out 18 balls using the scale (I find that grams works best).
9. roll each ball into a long rope about 8-10 inches long. flatten and then wrap the two ends to meet and push together really well. latten the whole thing to look like a bagel thin.
set aside on counter and continue with the rest.
10. preheat oven to 450 degrees.
11. when all are made and water is boiling, put 3-4 in the pot at a time. let sit for 30 sec. flip over using tongs and go another 20-30 seconds.
12. remove to waiting papertowel. add in 3-4 more repeating step 11 until all are done.
13. place bagels on lined cookie sheets.
14. lower oven temp to 425 and place in bagels.
15. bake for 10 minutes then switch trays (bottom tray to top and top to bottom for even baking) and bake another 7-10 minutes until golden brown.

I freeze these once they're cooled and just pull out when needed.

you can add lots of whatever you want. I make an everything bagel topping (adds 2 cals) or add spinach to the dough, cheese, whatever you fancy.
