Yummy salad

Hey everyone!

I was wondering if anyone had some recipes for really delicious salads...I apologize if there is a post on this already somewhere, but I looked back over a few pages and didn't see one...really didn't want to hunt through hundreds of topics!!

Anyway, I feel I need a better way to eat vegetables and leafy greens, but regular salad is boring. So if anyone has come across some quick and delicious ways to jazz 'em up, please share!1

    My favorite salad:

    3 cups of baby spinach
    one cup of cherry tomatoes
    2 oz of plain goat cheese
    1 tbsp extra virgin olive oil
    1 tbsp balsamic vinegar

    It's 346 calories, most or which come from the goat cheese and olive oil. The goat cheese has 10g of protein and both the olive oil and the goat cheese have good, healthy fats.

    Generally, I think any salad that includes cheese and/or fruit is going to be delicious enough to make you actually WANT to eat it!

    I add all sorts of things to my salad:

    Corn
    Sliced Strawberries
    Sugar Free Pears
    Sugar Free Manadrin Oranges
    Beans (Black, Garbonzo, pink)
    Gorgonzola
    Goat Cheese
    Dried Cranberries/cherries/blueberries
    Walnuts
    Pecans
    Almonds
    Sunflower Seeds
    Taco Meat
    Tuna
    Turkey Bacon
    Chopped Hard boiled Egg (whites usually)
    Baby spinach instead of Lettuce ( I only eat Mesclun/Sweet Lettuce- No iceburg)
    Grilled Chicken

    I change it up all the time!

    I try to add lots of protein in salads, and balance it with the cheese/nut fat.
