anyone care to share tips to manage the upcoming holidays? favorite foods/appetizers? recipes for not so awful pumpkin pies/rolls...stuffing suggestions??? veggies?

    I saw this in the recipe section.

    'light' cool whip (great value brand),
    Jello brand sugar free low calorie vanilla pudding mix
    Libby pure pumpkin
    pumpkin spice of course.
    I added up everything & the total is 410 calories for the WHOLE BOWL. The whole bowl has 3 cups, so if you have 1/2 cup per serving it"d be 68.33 calories per serving. Not too dang bad & it's so dang good!!!
    You could sprinkle it with low fat Graham Crackers

    There is nothing you could do to Stuffing to make it low cal.
    For the Veggies, just don't put any canned soup on top and you'll be fine.

    Apple, walnut, and blue cheese stuffed mushroom caps.

    Ingredients
    18Mushrooms, fresh, large
    3tbsp fresh chopped celery , finely chopped
    1tbsp butter
    1/2cup chopped apples , finely chopped
    2tbsp Bread Crumbs, plain, grated, dry
    2tbsp chopped walnuts , finely chopped
    1tbsp crumbled blue cheese
    1tbsp chopped parsley , minced
    2tsp fresh lemon juice



    Directions
    1 Take stems out of mushroom caps, reserve caps. Finely dice stems saving 1/3 cup.
    2 Cook chopped mushroom stems and celery in a frying pan with butter. Mix together mushroom mixture, apples, breadcrumbs, walnuts, blue cheese, parsley, and lemon juice.
    3 Arrange mushroom caps on a greased baking sheet spoon mixture into caps.
    4 Bake at 375 degrees F for 15 to 20 minutes or until mushrooms are just tender.

    Warm and creamy artichoke and spinach spread on top of crusty bead.

    6 1/2floz canned artichokes hearts, drained , chopped
    1/2cup grated romano cheese
    1fresh plum tomatoes , seeded and chopped
    1/3cup fresh chopped red onion
    1/3cup fresh baby spinach , finely chopped
    5tbsp mayonnaise
    1medium garlic cloves , minced
    10 1/2oz French bread baguette , loaf (whole grain, if available)
    Directions
    1 Combine the first seven ingredients in a large mixing bowl.
    2 Cut baguette into 30 slices, and place on an ungreased baking sheet.
    3 Spread mixture on top of bread.
    4 Broil 3- 4 inches from the heat, until edges are lightly brown, (3- 4 min.).

    There's some great sugar free crustless pumpkin pie recipe's. It's more like a pumpkin custard but is very satisfying and others can eat it and not feel deprived. Sugar free jello pudding and making a crum crust with coconut oil and almond meal vs graham crackers and butter is a good dessert too. Same goes for sliced apples, cinnamon and stevia. As for stuffing, haven't found anything worth a darn for that but I have found roasted yams with rosemary or cumin work as a satisfying side in its place. Look into any cooking clean site or low carb site for ideas. Winter squash is also a good side for the holiday meals. It's amazing what a little stevia and cinnamon can do to make it festive AND healthy.TVP breakfast sausage works out pretty nice to to help reduce traditional stuffing recipe calories. Just think clean and unprocessed and it will help out a lot. Nut meal over crust or go crustless, yogurt over sour cream, well you get the idea.

    GRAZIE .. LOOKS WONDERFUL.. i'M WONDERING IF i SHOULDN'T EXPERIMENT WITH A PIE USING EGG BEATERS AND NO FAT EVAP MILK AND STUFF???? ANYBODY DONE IT?? OF COURSE,, i'LL SUCK UP THE CRUST CALORIES COS i MAKE A WICKED PIE CRUST
