Does anyone know if I'll be able to get crispy potato cakes with cooking spray, or do I have to use oil?

  • Try the high-heat or "grilling" Pam cooking spray. You should be able to get a nice crispy cake without burning it using high heat or even the grill. I do think a little regular olive oil is ok though since its a "good fat". I cook with both. Also, sometimes I put food under the broiler for a tiny bit after cooking to get it nice and crispy if the pan didn't do the trick. Just be careful not to burn it- it happens fast.
I LOVE potatoe pancakes!!! I add whipped egg whites to mashed up-baked potatoes and a bit of flour- yummy.
