Vegan Eggs???

Hi, Im new to the vegan life and before switching to this lifestyle, I really really enjoyed scramble eggs/ cheese :) I have found awesome alternatives to almost every food EXCEPT eggs :( .. I tried the tofu scramble but Im not a fan of tofu just yet, and I was wondering if anyone has any advice as to what would make a great tasting egg alternative or am I just out of luck??

  • I have never found a decent non-baking egg alternative except in restaurants, so I'd be happy to hear this too. I know a lot of tofu recipes that are very close, though. Not identical, but super delicious.

    For baking, though, it's not as difficult (although you may have to alter other parts of the recipe to make it work).

    This is a good one. I also find that a 3-parts-nutritional yeast/1-part-garlic powder mix produces the best tofu scramble results for egg similarity.

    I ike tofu scrambler, but for baking, you can use energ egg replacer....

    Ener-G eggs is a powder the best I've use so far.

    Try looking at Indian breakfast recipes. I've seen vegan scrambled 'egg' recipes in the past made with chickpea flour which has a slightly eggy taste. There's also something called kala namak ( 'black salt') which adds eggy flavor, too. 'Vegan Brunch' by Isa Chandra Moskowitz has several scrambled tofu recipes, but I was surprised not to find any chickpea flour ones.     EnerG egg replacer is good for baking, but not good for creating things like vegan scrambled 'eggs' or 'omelets.' EnerG is a white powder which has gums and starches, but little 'egg' flavor and texture.
