Any salad suggestions?

I'm trying to find different ways to spruce up a salad? I'm a sucker for the whole lettuce, cucumbers and shredded carrots, but it gets kind of old when I continuously make the same kind of salad over and over.
How do you guys make a interesting, yet healthy salad?

I use 50/50 mix, cucumbers, tomato, avocado, sometimes a little feta, usually chicken breast or tuna, and every now and then a boiled egg...0

i'm allergic to leafy greens, so i can't have lettuce, so i make up for it buy using chick peas (they're always delicious!) maybe try adding corn or peppers, i always love the added flavor and crunch of those. Also, raw broccoli is a staple in mine, it adds a whoooole new dimension.0

Me too, I try and have a salad every day that consists of 2 cups of romaine, and other things added to it, but it got old, and now for a week I have skipped. Needing something different.0

TUNA TUNA TUNA! It tasted SOOO good on salad!!
Especially one of those Sweet and Spicy tuna pounches, then you don't need dressing either!
Oh, and wonton strips, bleu cheese, or tortilla strips. I like the have a little crunch.0 -
Here is my salad I have just about everyday at lunch and LOVE it!
50/50 Spring/baby spinach mix- 2 cups
6 baby carrots (cut in half)
1 string cheese (cut in chuncks and shredded)
4 oz chicken breast
8-10 medium strawberries (cut up)
fat free Raspberry vinagrette dressing 2 tbl spoons0 -
I eat a salad most days for lunch. I have lettuce, cucumber, tomato, green peppers, hard boiled egg chopped and McCormick salad toppers(it has nuts and such for only 35 cals a serving). It's really good. I don't usually put any cheese and go lite on dressing.0

I buy the broccoli slaw (julienned cuts of broccoli and cabbage) and add that to my greens. Also chick peas, pecans, and cranberries are great too - make sure you measure though.0

TUNA TUNA TUNA! It tasted SOOO good on salad!!
Unfortunately, I'm not a fan of tuna, but maybe chicken breast instead????0 -
I put sunflower seeds in mine! Croutons too...save-a-lot has a cheese/garlic flavored one you get 12 for 30 cals
I don't like it but I know some who put cottage cheese on theirs instead of dressing.
I also make a strawberry/kiwi salad in the summer for potlucks it's yummy too.0 -

I'd like to give you a prize for the string cheese... I LOVE cheese on my salad, but have issues with the portion control for it. This is BRILLIANT!0 -
-Change up the greens - spinach or spring mix?
-radishes, peppers (different colours!), celery, snap peas, alfalfa sprouts, green onion, red onion, mushrooms
-Tomato if I'm eating the salad right away... otherwise I find it makes everything soggy
-Fruit - apples (sliced and soaked in water w/lemon to prevent browning), berries, or craisins maybe?
-I am in love with sliced boiled egg on my salad... makes it extra filling, too0 -
I love my fruit salads and it mixes things up, here is a good one.
1 1/2 cups spinach (or any leafy green)
1 apple cut into squares (strawberries and raspberries are good too)
1/4 cup almonds or walnuts
1 serving of feta ( usually 1/4 cup but you can add as little as youd like)
1 tbs of strawberry poppyseed Vinaigrette dressing (or a balsamic would work too)
Add chicken if you prefer.
Yum...0 -
I make fruit salad and add it to my salads. Chicken salad is also good. I like to throw in nuts, dried cranberries, cottage cheese. I use spinach instead of lettuce.0

Here's my favorite salad (btw - I keep all ingredients chopped/sliced/or otherwise ready to go)
baby lettuce greens
cucumber sliced into half-moons
yellow summer squash sliced into half moons
thinly sliced red onion (rings chopped into quarters)
sprouts (alfalfa, bean, broccoli - whatever kind is great)
grated carrot
halved grape tomatoes
red pepper slices
pumpkin seeds
and sometimes homemade croutons made with crushed garlic, salt, and cayenne pepper
dressing in olive oil, lemon, salt, and pepper
Another fav salad of mine in a classic french salad called salad Lyonnaise here's the link: http://simplyrecipes.com/recipes/poached_egg_and_bacon_salad_-_salad_lyonnaise/
It consists of salad, bacon, croutons, a poached egg, and mustard dressing. total awesomeness0 -
My favorite is 1 cup of romaine, 1 cup of mixed leaf, 1 cup of spinnach. 3-4 oz of baked/grilled chicken or tuna fish salad (yes, made with mayo), 1 oz cut up cheese, 1 tablespoon of dried cranberries with oil and red wine vinegar.0
-
ALL of these salads sound really good. I'm some what of a picky eater and not to mention lactose-intolerant so maybe skip the cheese and tuna, but everything else sounds good.0
-
ooooh! Another one!! (fancy again but sex on a place in my opinion)
salad greens
torn up prosciutto
chunks of fresh mozarella
1 peach, cubed
dressing is olive oil, lemon, salt, and crushed red pepper.
You MUST try this at least once. You must!0 -
Dried cherries. Grapes. Pumpkin seeds. Really, anything you like.0

I love a mexican style salad. Black beans, Corn, Pico De Gallo, Avocado, Bell Peppers, Onion, Green onions, A little light shredded cheddar.0

I switch my regular lettuce up with Field Greens and mix in a little baby spinach. I also buy the pre-cooked frozen shrimp and add that in with a little chopped egg white, red cabbage and on occasions sliced mushrooms. Also, I buy the fresh chicken tenders and do an oven fried chicken and put that on my salad sometimes. It reminds of the salads with fried chicken tenders that are so unhealthy. Try changing up your salad dressings too, that might help.0

Thanks for the tips everyone. I'm really taking some of these ideas to the kitchen for my salad.0

I have two/three favourite salads.
I'm getting excited for the season because all the ingredients for one are starting to crop up...it's my usual Christmas salad, because it is bright and cheerful and vividly coloured. I toss mandarin orange slices and pomegranate seeds in with spinach, and add some chopped candied pecans (you can skip the pecans if you're watching those sorts of things, or add them plain rather than candied). I usually serve it with a raspberry vinaigrette, but you could use a different type if you wanted--I would definitely say vinaigrette rather than salad dressing, though, because the salad will be sweet enough as it is, you want to add some tartness rather than anything creamy.
For my lunches at work, I'll often take a spinach salad with carrots and diced apple, and maybe a few slivered almonds. I make my own dressing for that:
White Satin - Granulated White Sugar, 6 teaspoon
Oil - Olive, 0.25 cup
Heinz - Distilled White Vinegar, 2 tbsp
Parsley - Freeze-dried, 1 tbsp
Sauce - Pepper, tabasco, 0.25 tsp
(this makes WAY more than you need for a single salad, but it'll keep in the fridge--just make sure you stir it well before pouring, because the sugar will separate out).
I also use that dressing for a spinach salad with oranges, celery, green onion and slivered almonds.
Oh! And in the summer months, I love spinach with watermelon or strawberries and crumbled feta cheeese, again with a raspberry vinaigrette. It's sweet and refreshing.0 -
My go to salad right now is baby spinach, strawberries, goat cheese and nuts, usually pecans or walnuts with Litehouse Organic Balsmaic Vinaigrette.
I will try a few of these suggestions, they sound pretty good.0
