Quarterback Quesadillas (recipe from CalorieKing.com newsletter)

Yield: 16 x 1/2 tortilla servings
Whether for the Super Bowl, tailgate party or touch football, score big with this delicious, spicy dish!
Suggestions:
* Use rubber gloves when handling hot peppers.
Ingredients:
1 lb cooked lean pork roast, chopped
1 cup reduced-fat Monterey Jack cheese
1 jalapeño peppers, seeded and minced (1 - 2, to taste) *
1/4 cup minced onion
1/4 cup minced cilantro
1/4 tsp salt
1/2 tsp black pepper
8 (10-inch) flour tortillas
1 cup salsa, homemade or purchased
Directions:
In large bowl, stir together the pork, cheese, hot peppers, onion, cilantro, salt, and black pepper.
Arrange one-eighth of the filling on each tortilla, covering half of it. Fold the tortilla over to make a half-moon. Place quesadillas, not touching, on shallow baking pans.
Bake in a 500ºF oven until tortillas are crisp and golden; about 5 minutes. Transfer to large cutting board and cut into halves or wedges, to serve with salsa.
