Pork Dumplings with Dipping Sauce
Makes about 40 dumplings
Ground pork with aromatic ginger, garlic, cilantro and green onion fill these satisfying dumplings, served at Chinese New Year celebrations to bring good fortune and wealth for the coming year. To make dumpling soup, simply cook the dumplings in chicken or vegetable stock.
Ingredients
Dipping Sauce
1/2 cup tamari
1/2 cup rice vinegar
1 teaspoon finely chopped ginger
1 teaspoon dark sesame oil
1 teaspoon honey or sugar
2 cloves garlic, finely chopped
Pinch of red pepper flakes
Pork Dumplings
3/4 pound ground pork
1/4 cup chopped cilantro
1/4 cup chopped green onions
2 cloves garlic, finely chopped
1/4 teaspoon ground ginger
Healthy pinch of white pepper
1 tablespoon seasoned rice vinegar or mirin
1 to 2 tablespoons tamari
1 package (about 40) wonton wrappers
Method
For the dipping sauce, whisk all ingredients together and set aside.
For the dumplings, combine pork, cilantro, green onions, garlic, ginger, pepper, rice vinegar and tamari in a medium bowl. Stir well to combine thoroughly. Arrange a heaping teaspoon of pork filling on a wrapper and follow the instructions on the package to form into a wonton. Transfer to a wax paper-lined baking sheet and repeat process with remaining filling and wrappers. Bring a large pot of water to a boil. Gently lower the dumplings into water and cook for about 5 minutes, or until they float to the surface. Alternatively, steam the dumplings for 15 to 20 minutes. Remove a dumpling and cut into it to make sure that the pork is fully cooked. Carefully remove dumplings with a slotted spoon to a platter. Serve immediately with dipping sauce.
