It's nothing fancy but my family eats red beans and rice for Christmas. It's delicious and something you can put on and leave while enjoying the company of your family.

I usually do a standing rib roast (prime rib w/ au jou) for X-mas. Gordons food sevice has them precooked.... really easy and everbody loves it!

I was totally going to suggest soup, but if you want something totally different that might be out. What about Christmas Brunch, or breakfast for dinner? There's such a wide range of foods, and not just scrambles eggs. You can definately add a mix of healthy stuff like fresh fruit and a breakfast quiche for you, along with the heavier stuff for everyone else....

I usually make a chestnut and mushroom bourguignon as most of us are vegetarian. Last year I did artichoke, walnut, squash and feta roulade, which was ok.

We pick a different cuisine for each Christmas: Italian, Mexican, Chinese, etc. Everyone brings a their favorite or new dish from the chosen cuisine for that year. It has worked out well and we have got to try some new, fun, and yummy foods.

Tamales, baby. Also, pozole is a great, hearty stew (made with pork or chicken and hominy) that is enjoyed in Mexico for Christmas and New Year's.

Christmas is my one day of the year off. I throw a party the night before and we eat leftovers for Christmas. This has become one of the kids favorite days of the year, because they know if there are any cookies left over, they can have them for breakfast.

I have NO idea. This will be the first Christmas Dinner in 10 years I won't be making. I've been invited to significant others family gathering.

Usually I make prime rib and all the trimmings.

Talk to your family about the foods your Dad loved and clean them up. A good pot of chili and baked potatoes maybe?

Greek food. Spanakopita, moussake, a big greek salad with black olives in abundance, and baklava or creme caramelle for dessert.

Yum to the power of infinity.

Also, my side of the family has done Chinese potluck for Thanksgiving for a number of years now, and we had to miss it a couple of years in a row. So turkey dinner at Christmas is still a treat. My husband and I even went out for sushi on Christmas Eve one year because we wouldn't be around family for the big event. It was great!

You could do a different theme every year and keep it interesting. :-)

Many years ago we had this conversation with my Mother-too much turkey. So since then we've always done steak. If I'm having Christmas at my house I buy Chateaubriand or a Prime Rib Roast and then I make homemade Bernaise sauce. Super yummy!

Amen on the pozole!!! That's the first question I ask whenever I talk to my comadre about Christmas Eve dinner...the only thing that matters is if there will be pozole!!!

It's festivus for the rest of us! Hey! Not really sure what I'm making yet. But I'm thinking about grilling some turkey drumsticks.
