Healthier Chicken Parm :)

4 boneless skinless chicken breasts
1/3 cup all-purpose flour
1/3 cup freshly grated Parmesan cheese
1 tsp salt
1 tbsp steak seasoning
1 egg white

2 cups of cooked spaghetti

1 tbsp light butter
1 tbsp minced garlic
28oz crushed tomatoes
1 tsp brown sugar
1/4 cup low fat heavy/ double cream
salt + pepper to taste


9 basil leaves, chopped
1 tbsp finely chopped parsley

1 tbsp light butter
1 tbsp extra virgin olive oil

4 tbsp low fat mozzarella cheese
grated parmesan cheese

whisk together flour, parma cheese, salt + steak seasoning in medium bowl.
coat chicken in egg white then flour mixture, let sit.
melt tablespoon of butter over medium heat, stir in garlic cook for 2 minutes.
Pour in tomatoes and sugar, bring to boil.
Simmer for 10 minutes.
Lower heat, add cream, parsley and basil.
Add chicken breast to butter and olive oil, cook on meduim high 4-5 mins each side until the crust is golden brown.

Right to serve :
Sprinkle mozzarella and a bit of chopped parsley / basil on top of chicken.
Let sit until melted or put under broiler for a minute.
plate spaghetti and put sauce over.
sprinkle with parmesan.

OR

spoon sauce over chicken and top with shredded mozzarella cheese.
plate spaghetti and pour sauce over. place chicken over sauce
let stand until mozzarella cheese on the chicken has melted.


i prefer the first way because i love my chicken really crispy.

    This looks soo yummy. Perfect meal for a work out day :) I am going to have to try and make this for my boyfriend. Hes obsessed witht pasta, and I've been neglecting to cook him some lately due to the high calorie content in most dishes!
