What are your favorite low cal dinners?

Preferably easy and not very time consuming to make.

I'm always falling down when it comes to dinner 'cause I reach for the easy "throw it in the oven" food :(

  • shake n bake chicken and potatoes? Easy meal and all you do is throw it in the oven :D

    shake and bake or grilled chicken accompanied by fried mushrooms usually... or baked yams, depending on how much time I have. Baked yams are easy (wash, wrap in foil, throw in oven at 350F), but take a while (about 1 1/2 hours) to bake.

    Dinner scramble!

    1 jumbo egg
    5 jumbo egg whites
    2 cups frozen broccoli
    1 oz. reduced-fat sharp cheddar cheese, diced
    2 Tbsp. scallions, chopped
    cayenne, salt, nutmeg to taste

    Put it all in a bowl, mix it up and nuke that puppy til it's cooked and fluffy. I usually stir it once or twice mid-cook. Super tasty and only 400 calories!

    I make chicken stroganoff, I got the recipe from here but have played around with it.

    300g skinless chicken breasts
    1 can condensed 98% fat free mushroom soup
    1 Onion, sliced
    1 cup of mushrooms
    1/4 cup lite sour cream

    Combine it all in a casserole dish & then cook it in the oven. Take it out when the chickens cooked. If you cook it on low it's nice & tender.

    It serves 3 people & is only 273 calories. I serve it on top of jasmine rice.
    It's really easy & when I'm working I throw it together the night before & put it in the fridge.

    The cajun seasoning is use is called “Weber Grill Creations: N’Orleans Cajun Seasoning”. It’s at Walmart or Tom Thumb or any of the major groceries store. It’s awesome on everything.

    How about using a crockpot?

    Right now I have Mexican Crockpot Creamy Chicken in mine......smelled soooo good when I went home at lunch!!

    I found the recipe on MFP, do a search for it.....super easy to make!!
