Cabbage Soup

Cabbage Soup - 16+ servings
Ingredients
2 tbsp Olive Oil
2 Bell Peppers (we used one green, and one red), chopped
2 Dried peppers, sliced
1 medium head green cabbage, thinly sliced
2 turnips, coarsely chopped
2 potatoes, coarsely chopped
1 large cooking onion, chopped
3 cloves garlic, minced
1 64oz bottle V8
7.25 cups water (split into 6 cups and 1.25 cups)
2 packets of Goya Sabor a Jamon
1 tsp marjoram
3 bay leaves
1 tsp thyme
2 tsp salt
1 tbsp cumin seed
1.5 cups Textured Vegetable Protein
1/8 cup liquid smoke
1/8 cup soy sauce
Prepare all of your veggies - this is the most labor intensive part of the entire process.
In a large stockpot, pour your olive oil. Set to a medium heat.
When the oil is heated, drop in a cumin seed. It should start sizzling immediately if its ready. Add the rest of the cumin seeds and let cook for about a minute.
Add your onions, garlic, and dried pepper. Cook until translucent.
Add the chopped peppers. Cook for about 3 minutes.
Add your cabbage. Wilt for about 3 minutes.
Add potatoes, turnips, 6 cups of water, spices, and container of V8. Cover, and bring to a boil on a medium heat (stirring occasionally).
In a separate bowl, combine the TVP with the liquid smoke, soy sauce, and remaining water. Let it soak while you wait for the soup to come to a boil.
When the soup has come to a boil, add the TVP. Lower the temperature to medium low and simmer, covered, for 15 minutes.
Uncover and simmer for 15 more minutes.
Serve with some crusty bread. You may need to add salt, the cabbage, turnips, and potatoes all tend to suck it up. Jen and I don't like really salty flavors so this works just fine for me.
Everything here cost less than 5$. Whole ingredients are cheap!
