A few questions!

Hey everyone, this is my first post here, so I hope I'm doing this right.
Basically, I'm trying to change my eating habits due to kidney problems, my doctor recommended I go on a low sodium, low protein diet, and I've been doing pretty well for the past two months. I've lost about ten pounds since I started (she wants me down to around 135-150lbs from the 183 I was before).
So my main problem is, even after two months of this, I'm still hungry most of the time, which makes me think I'm either not getting the nutrients I need or I'm not just lightly active like I thought.
Because of the low protein thing, I can only have one dairy product a day and one meat product (or three alternatives like nuts) and I have to cut way back on certain grains, so most of what I can eat is veggies. I'm not supposed to be taking supplements either.
I don't really work out, but I'm on my feet for most of the day, especially when at work, and I have no problem getting to 10000-14000 steps almost every day. I don't know if I'm lightly or moderately active, since I don't really do any vigorous excercising.
Should I be hoping my calorie intake? Thanks for the help.
