Grocery shopping time!!!

Ok, so see my little ticker down there? Yup, it used to say 29. So it's time to do major grocery shopping since I'm basically out of anything but mac and cheese and soup. So, here goes. I'm a super picky eater, not big on veggies at all, except corn, peas, green beans, and cooked carrots. I love strawberries. I am a college student so I like it fast, cheap, and easy =)

    Chicken breast is usually on sale in one form or another, and it's versatile.

    Buy the bag of whole carrots if you go fresh...the baby carrots are more expensive and slimier...in my opinion. It's worth it to peel the whole and slice 'em.

    If you buy canned veggies because of price, rinse them, but frozen is better.

    Buy generic frozen strawberries. You can buy protein powder cheap at Wal-mart and it has decent reviews...make your smoothies.

    Avoid deli lunch meat because, although it can be convenient, it's too pricey and loaded with sodium. Buy a jar of peanut butter. It's more economical than your Uncrustables.

    Use your crock pot and freeze stuff, if you have to. It's usually healthier and cheaper to make it yourself and store it, than to buy convenience foods. Designate Sundays (during football) to pre-make your food for the week. Then it can be readily available for you.

    I follow the same pattern for just about all my foods: Meat (chicken or fish, but sometimes beef or pork), frozen veggies (mixed bags for variety), some form of sauce or marinade, and rice or pasta.

    The thing I like about the mixed bags of veggies is that it's a good way to try new things you might not know you like, and even if you don't like it (ie, I'm not a fan of water chestnuts) there's no so many in each serving that I won't just take my big girl pill and suck it up. :laugh:

    Examples:

    Chicken, oriental blend veggies, and a little teriyaki sauce cooked in one frying pan, and rice. Plain brown rice is the cheapest way to go, but if you're more lazy than broke and don't mind the gazillion mg of sodium, something like Rice A Roni or Knorr's Rice Sides are good and you can cook them right in the same pan in just 10-15 minutes.

    Tilapia fillets, Italian blend veggies, lemon pepper marinade (I don't even bother marinading beforehand... I just drizzle it over the fish & veg in a small baking dish and cook 'em together), and penne pasta, topped with a sprinkle of Parmesan cheese.

    Chicken, pepper stir fry blend, frozen corn, black beans, ground cumin, some frozen spinach, and a glob of salsa, cooked in a crock pot then mixed with shredded Taco cheese, tastes like the filling for Southwest Eggrolls. Have it over rice, crumble a few tortilla chips on top. Or roll it in whole wheat tortillas and bake as enchiladas. For extra yum, marinade the chicken in some lime margarita mix a few hours before.
