I am starting this back up for what seems like the zillionth tiime trying to lose those stubborn 15/20 pounds.

I keep getting into food ruts, and end up making/eating the same thing day in and out. I don't have much time to cook, or even sleep for that matter (dual degree grad student), and just keep falling into the same routines.

I really want help though, because since moving to a new state I have lost a majority of my muscle mass, and don't like the person I see in the mirror anymore.

Does anyone know where I can find easy/low calorie/ 30 minute or less vegetarian (or mostly vegetarian) recipes? Also, any ideas for quick and healthy snacks?

I have raw almonds, and used to buy carrots and chop them up in the beginning of the week... but it gets old eating the same things all the time.

Any help/ advice/ encouragement is welcomed!!! Thank you!!!

My new favorite food is spaghetti squash. People use it a substitute for pasta and it is low in cals. I think it is like 42 cals per cup. You can boil it, bake it, microwave, etc. I'm sure if you googled it you could find some recipes you might want to try.

When I'm in a hurry to make dinner I like to make stuff like....

    Stirfry
Chop and saute one block of tofu or some chicken breasts (for your meat eaters).
Throw in some frozen stirfry veggies (they sell these in bags in the frozen section).
Make instant rice on the side (but don't eat a bunch of rice, that's your calorie hog).
    Top with soy sauce.

    Noodle Soup
Cook noodles according to directions, but let them stop just short of al dente.
    Make your favorite veggie broth.
    Add chicken/tofu cubes.
Add frozen soup veggies (corn, peas, lima beans, carrots, onions, bell peppers, whatever is easy and premixed).
    Salt to taste.

    Personal Pizzas
Get whole wheat flour tortillas and jarred pizza sauce.
Chop onions, bell pepper, mushrooms, whatever you like.
Bake the tortillas at 350 for 5 min to lightly toast.
Cover each tortilla with some sauce, some cheese (daiya if you want to to vegan, mozzarella if you don't), some veggies, and cooked meats and/or some cubed sauted tofu.
Bake until the cheese melts and the veggies soften.

When I want to snack it up, I'm lucky that I have an air popper, because air popped popcorn is the way to go. I spray it lightly with cooking spray and sprinkle salt on it that I've ground fine in the coffee grinder. MMMM.

Good luck on your journey! If you need any other recipe ideas, message me. I'm vegan but all my stuff can be un-veganized.
