Catfish- help me out!!

Sooooooo, a coworker unloaded about 15 lbs of catfish on me (not complaining!!) and the freezer situation is getting a little precarious so it's time to start cookin it. What do I do with it?? I love fish but have 0 catfish experience. I've had it fried in a restaurant all of about twice. Tips for frying it? What else can I do with it so I don't have to eat 15 lbs of fried food?

    Catfish is best fried (just dip in egg wash, then toss in fish breading), but if you want "healthier" recipes, you can Google oven fried or blackened catfish. Both are good.

    I cook mine breaded with Louisiana brand lemon flavor in a pan with very little oil and a lid. It is awesome! I live in Idaho, not much up here.

    Cook it in a skillet with citrus (lemon, orange, lime, etc...)?

    Sprinkle both sides with Tony Chacheres or another Cajun/Creole seasoning. Heat cast iron skillet, or other heavy bottomed pan, on med/high. Add a little bit of butter to the pan and cook catfish 2-3 minutes on each side, shorter or longer depending on thickness of filet. Squeeze a little fresh lemon on top and enjoy!
