Anyone have a good, healthy recipe for scones? The cafeteria at my job makes THE BEST scones, but I know they must be at least 500 calories each. Every once in awhile, I do allow myself one, but I'd love to find a yummy, healthier recipe.

Oh man, all weekend I was craving a scone. I haven't broken down yet but I'm so close! I just want one! Just one delicious buttery hot scone!!

These are a drop scone which makes them really easy. They also freeze well. I wrap them individually. When I want one I take it out of the freezer. Place on a napkin in the microwave and heat for 20 seconds. Time could vary. My favorite is cranberry with orange zest. DH loves the chocolate chip.
I don't have the nutrient info though.
Scones
½ C dried blueberries 1 ½ tsp baking powder
1 C boiling water ¼ C sugar
1 egg 6 tbl Smart Balance (or other margarine)
½ C soy milk 1 tbl wheat germ
¼ C fat-free milk 2 tbl ground flaxseed
2 C flour
Preheat oven to 400 F.
Place blueberries in bowl and cover with boiling water. Set aside.
Beat egg in 8 oz. measuring cup add soy milk to the ¾ C line, fill to 1 C with fat free milk.
In a large bowl sift together the flour, sugar, baking powder. Add Smart balance. Mix until it resembles coarse meal.
Drain the blueberries. Add to the flour mixture along with toffee chips, wheat germ, flaxseed. Stir to distribute evenly. Stir the egg and milk and add to the flour mixture. Stir just until moist, do not overmix.
Drop by ¼ cupfuls onto greased baking sheets.
Bake for 12 min. or until golden brown.
Makes 12 scones.
These are small and I make only 8 using a 1/3 Cup. I also change the blueberries and toffee chips for any other fruit, nuts, chocolate chips…0 -

Although, I know Wegmans has great scones...little mini ones, and I think they are about 200 or something for 3, so not too bad really.0 -
