I just started a new job in a factory and I will have to take my lunch because I am NOT eating out of a vending machine. Any ideas of what I can take for lunch instead of a sandwich and carrots (what I will be taking tonight

Wraps are good.
You can do a lot from snacks to lunches.
You can roll up fruits and some PB in there.
Tuna with alfalfa and tomatoes and tons of veggies. Grilled chicken wraps.
Soups (low sodium ones). Chili with lots of protein.
Sometimes I eat oatmeal for lunch...
Edamame.
Apple chips (the baked ones)
Salads
The other day for a snack I took cheese and sliced turkey and rolled it up around a pretzel rod It was delish as a snack.0 -
I loathe making and taking lunches with the fire of a thousand suns.
That said, an easy, lo-cal, healthy (well, if you ignore sodium, which I do) lunch is a pop-tab Progresso soup with a plastic bowl and lid (so it's not messy to haul home to wash).
Or, make your own and bring it in a thermos.0 -
Pitta bread and houmous
bread sticks and cream cheese (low fat of course!)
rice salad (sweetcorn, olives, peppers)
Red pepper and squash soup (yummy) - put in a thermos so you don't need to even microwave)
rice cakes and marmite/peanut butter0 -
chicken and veggies0

I'm a big fan of leftovers. I also take some time on the weekend to make a big batch of something healthy (lately, a lot of soups/stews) and divide it into reasonable portions so I can take to work throughout the week (with a serving or two going into the freezer for more hectic times).
Another easy option is to make a "baked" potato in the microwave and top it with a bit of chili. I know of people cooking spaghetti squash in the microwave as well--add a little chicken and some sauce to make a meal of it.
I also make scrambled eggs in the microwave at work, usually with a bit of meat and veg mixed in.0 -
I almost always take leftovers from dinner. We have a fridge but I rarely use it because an insulated lunch bag keeps it fresh until lunch.0

I get in trouble with lunch when I overdo the variety so I stick with either chicken and veggies, a turkey sandwich with spinach on whole wheat, tuna salad (lite mayo or an olive oil mixture) or leftovers.0

My absolute favorite thing for lunch is leftovers (stew, chili, whatever, just throw it in a big thermos), but if I'm fresh outta leftovers, I like to make a huge salad in a tupperware and put the dressing in a separate container so it doesn't get all soggy.0

I like leftovers (from dinner) for lunch! Maybe a small side salad too.0
