Do you have a low cal twice baked potato recipe?

Thinking about making some twice baked potatoes to go with a roasted sirloin steak. Any ideas? I don't want to fatten them up with sour cream, butter, etc. I was thinking about maybe using some Laughing cow Queso chipotle wedges I have on hand. Would love to hear any suggestions! Thanks!

sub fat free greek yogurt for the sour cream and if you wanted to add cheese you could use a low fat variety of cheese0

How about some fat free ranch dressing?0

eating well.com has a stuffed twice baked potato recipe. I made it a few night ago and it was amazing! I had it as my main dish but if you leave out the ground beef you could have it as a side.0

use cooked pumpkin instead of potatoes?0

Nope. Just bake it once and top with Greek yogurt instead of sour cream. Add some spices and wala! You have a wholesome, nutrient-packed, high in protein side.0
