Baked pumpkin oatmeal

a variation of some other recipes I've seen. I made it into 3 servings but you could do more or less depending on what fits your needs :)

1/2 cup of oatmeal
6 oz of canned pumpkin
3 scoops vanilla protein powder
1 1/2 cups water
1 egg white
1 tbsp cinnamon
1/2 tsp nutmeg (or pumpkin pie spice)

Nuke oatmeal and water in microwave for 1 min. Allow it to cool some then add the pumpkin, protein and spices. Pour the entire mixture into a 9" square baking dish. Bake for about 20-30 mins at 350. I stirred mine about 15 mins in so that the edges didn't get more done than the rest.
The entire dish comes out to a bread pudding constancy. I divided it up into 3 smaller containers and reheat it daily. Yumm-o!

Stats: 180 cals

    this is probably a silly question.. but I don't eat protein powders. Will it taste the same.. and still be a good consistency without it? It looks delicious!

    No clue! But I think you could up the oatmeal for a thicker constancy but w/o protein powder or something else I think it would be too watery.

    I did something similar this morning:
    1/2 c. pumpkin (I used squash cause I have plenty that I froze into 1/2 c. balls)
    1/2 c. milk (I use raw but any kind will do)
    1/3 c. old fashioned oatmeal
    1/2 tsp vanilla
    1 tsp pumpkin pie spice
    1 tsp honey
    dash of salt
    I just warmed it up in the MW for a minute and let the oatmeal soak up the liquids. My recipe was 258 cal but a very good, filling breakfast.

    You can, but you dont get het same consitency, the edges cook much faster and it has a tendency to overflow if you dont watch it like a hawk! I do a ton of baking all at once so popping it in the oven isn't really a problem for me.
