Low Carb Rachel Ray Recipe (Revised to fit low carb)
Ingredients
8 slices peppered bacon (chopped)
1 large red onion (or 2 medium or small) (diced)
4-5 garlic cloves (minced)
2 cans fire roasted tomatoes
1/2 cup chicken stock
3 cups baby spinach
1 block cabot extra sharp white cheddar cheese
First off, you are going to need a pan that can fit a lot into it, unless you like doing tons of dishes, then by all means use different pots. Probably a bit bigger than what you would use for hamburger helper. I use a pasta pan.
And you can use turkey bacon and just take a pepper grinder and cover them with pepper. BUT I've found doing this, I have to use either olive oil or canola oil and the calorie count stays the same.
Okay, put the bacon in the pot and cook on medium heat until pretty crisp.
Then add red onion and garlic, and cook until the onion turns a very light pink.
Add in the spinach until it is mostly wilted.
Add chicken stock and tomatoes.
Simmer until reduced.
Then shred the cheese and add on top.
What you should get is a somewhat soupy mixture. Normal recipe omits the spinach and utilizes whole wheat pasta and 1 whole cup of chicken stock.
If you split it up into 8 servings, each will be only 200 calories even with the cheese
